Inspired by an abandoned French yeast trial from the 1900’s and whole-bunch fermentation techniques in wine making, we have developed an entirely new method of cider production.
Whole leaves of Sweet Alford are added and interact with the fermenting juice of Yarlington apples. Yarlington is fabulously fruity and bold with a strong tannic character. The Sweet Alford leaf integrates the tannins and acidity beautifully adding a freshness and lift with notes of strawberry and borage.
A hazy, gold cider with a light carbonation. Aroma heavy with vinous plummy notes, coffee and honeysuckle with a late clean tannin, reminiscent of oak but with a broader botanical note.
